Materials: 1 cup butter, softened; 1 cup granulated sugar; 1 cup brown sugar; 1 teaspoon vanilla; 3 eggs; mini peanut butter cups (unwrapped of course); 3 cups flour; 1 teaspoon baking soda; 1 teaspoon salt; 12-oz. pkg. chocolate chips; 1 cup chopped nuts (optional).
Instructions: 1. Beat butter, sugars and vanilla. Add eggs one at a time, beating well after each. Gradually beat in flour, baking soda and salt. Stir in chocolate chips.
2. Line mini muffin pans with paper or grease. Spoon batter into each section, filling almost to the top.
3. Bake at 375 degrees for 9-11 minutes or until golden on top. Remove from oven and let sit one minute.
4. Gently push a peanut butter cup into the center of each muffin until level with the top. Leave in the pan another couple of minutes, then remove and let cool.
